Clever Ways with Egg Salad for Easter

Egg salad is the perfect item for an Easter brunch menu. Eggs and Easter of course go hand in hand and once the colored eggs are all found, it's quick and easy to peel them to whip up a bowl of egg salad. Or if you use plastic eggs for your hunt, you can make up a bowl of egg salad in advance and even make your own homemade mayonnaise.  But why stop there? When not use a bit of creativity to create some egg salad art in a spring theme for an added 'wow' factor?

Idea #1: Lox and Dill 'Carrots'
Stuff egg salad into rolled lox or smoked salmon pieces and then use fresh dill for the carrot tops.

Idea #2: Tomato and Scallion 'Tulips"
Cut the top third off a box of cherry or plum tomatoes and then cut jagged teeth in each to look like a tulip. Arrange green scallions as the stems and then tie your 'bouquet' with a pretty ribbon.

Idea #3: Lemon and Mint 'Rose'
Peel a lemon carefully, keeping the peel in one piece.  Roll the peel tightly to resemble a rose and then add some fresh mint 'leaves'.

Happy Easter!

    1. I'm Scandinavian so I'm a huge lox and dill fans anyway, but those were really, really good.
