How Many Eggs Should I Eat a Day? A Week?

I eat lots of eggs. I mean lots. Naming my blog Fresh Eggs Daily could NOT be more apropos. I don't really keep track, but I would guess that I single-handedly eat probably at least a dozen and a half to two dozen eggs a week, easily, despite current federal dietary guidelines to limit egg consumption to one a day, or just seven a week. So how many eggs should you eat a in a day or a week? Should I worry about my cholesterol levels and risk of heart disease? Not necessarily.

A bit of background first. I come from a long line of chicken keepers. My grandmother lived to be 99 years old and I would bet she also ate eggs nearly every day, her entire life. And no, she didn't die of a heart attack. I personally have my cholesterol tested every couple of years according to American Heart Association guidelines and it's always been normal - in fact my 'good' cholesterol is generally extremely high. So I haven't been worried about my egg consumption.

But although Mother Earth News did a study several years ago showing that free ranged and pasture-ranged chickens lay eggs that contain up to 1/3 less cholesterol than caged chicken eggs, I never really had any scientific proof that eating more than one egg a day, which contains about 180 mg of the 300mg of daily cholesterol recommended by the American Heart Association, was unhealthy. 

And while egg whites have fewer calories and less cholesterol than the yolk, I do eat the yolk because that contains the bulk of the nutrients in the egg. (Even chickens know that. Try cracking an egg into a dish and offering it to your chickens. They'll eat the yolk and leave the white. They just know stuff like that.) And to make it even more interesting, I often eat duck eggs which contain even MORE cholesterol than chicken eggs - more than 600 mg per egg! But they also contain more vitamins and nutrients.

Now, however, it seems a new study has just come out which seems to point to the fact that dietary cholesterol isn't the cause of heart disease and the 300mg limit will soon be lifted by the federal government based on recommendations by the Dietary Guidelines Advisory Committee. Bad cholesterol and saturated fat, such as that in butter, cream, fatty meats etc. is still bad. But foods high in cholesterol, such as eggs, shrimp and lobster (as long as they aren't drenched in butter, that is!) are now thought to not contribute to high cholesterol. (as an aside, a study done back in 2001 actually said these same things)

Another study done in Finland in the spring of 2016 provided more evidence that eating a high cholesterol diet does not increase a person's risk of heart disease. The people in the study ate four eggs a week and were found to have no increase in cardiovascular disease from their diet.

So as long as you don't fry your eggs in bacon grease or butter, and instead use olive oil, poach or hard-boil your eggs, they may actually be far more heart-healthy than you think. Eggs contain Omega-3s and are an excellent source of protein.  They contain every nutrient needed for life (except vitamin C) and most of the fat in them is monounsaturated fat (the 'good' fat).  Eggs help build healthy brains, eyes and muscles, they boost your immune system, give you energy and can even help with weight loss. 

This is all great news for the backyard chicken keeper. Not only do we obviously have basically an unlimited supply of eggs for our own family to eat, if you sell your eggs, a greater demand in response to the new study will mean your business will be booming! So go ahead, eat more eggs!

I don't think you have any worries about the number of eggs as long as the chickens are free to roam around and eat all the bugs and grass that they can, with a little help from mama giving them some plant products like corn and greens and other garden goodies. Your kind of chicken raising, produce the healthiest eggs that man can consume. Eat up and enjoy.

  3. I am wondering about the comment in the article "They contain every nutrient needed for life (except vitamin C)". I'm not taking exception to it but wondering if you could expand on that in a future article. I know there is no such thing as a perfect food that has everything we need but this will make me eat even more eggs!

  4. I've never worried about his many eggs I eat. I love them! And if I want scrambled eggs, I cook them with coconut oil. Yummy!

  5. I completely agree. My grandparents had a chicken farm, ate 3 eggs every morning, had zero cholesterol problems, never took any prescription medication and lived healthy as oxes until a ripe old age...

    I started raising chickens in May, 2014. In April of 2014 I had blood work. My cholesterol was 202. I ate approximately four eggs a day. In October, 2014, I had blood work again. My cholesterol dropped to 159!!! Woohoo!!! Thank you backyard chickens! I LOVE my chickens. Thanks for the fun blog reading!

  8. We top off many food with a fried egg in our's simple and nutritious if you know where your egg comes from that is. Viva la pasture raised chickens and adios to industrial farmed ones!

  10. I eat 2-4 eggs each and every day from my pastured chickens. I also eat meat everyday (grass fed of course). We also use lard from pastured pigs that were fed only non-gmo, organic feeds. Never had any bad blood work even though I eat what most doctors would call a poor, fatty, high cholesterol diet.

    I truly believe that the "modern" mass produced meats, eggs and vegetable based fats that most folks eat today are not the same nutritious foods that I just mentioned above.

  11. Hi. i read your blog sometimes and i would just like to say, butter is better. coconut and olive oil are great and i am not against them but butter (or ghee)is not bad for you. i totally agree with Chickens101 on the grass fed meat and lard and we eat grass fed too.

  13. Great article, but you've also missed something rather ironic. The same thing that the government has said about eggs is also true for butter. Olive oil should not be used for cooking over certain temperatures etc. It would have been an amazing post had all sides been researched properly :)

  14. My good cholesterol is always really high too. One of my docs said they've never seen someone with that high. Bad cholesterol is low to normal. Couple years ago my good cholesterol was 145. I had a 5 egg omelette yesterday. I don't eat them everyday though. 3 times a week usually.
