Tex Mex Eggs aka Migas


Just when you think you've heard or every egg dish possible, a new one comes your way. At least that's how I feel.

When Kate from Framed Cooks told me that this week's recipe was "migas", I had no idea what she was talking about.


But after some quick Googling, I learned that “migas” is the Spanish word for “crumbs”.

In Spain, apparently migas is a traditionally made from stale bread. 

Here in the US, and specifically in Texas, migas are made with tortillas or corn chips and scrambled eggs topped with an array of other Tex Mex toppings including cheese, guacamole, sour cream, salsa,  cilantro and lime juice.

Sounds delicious right? Kind of like an eggy deconstructed taco!
